Our head chef, Jean Baptiste De Palma usually calls Marseille, in the South of France, home but more recently has been here with us in Australia.
He has worked at various restaurants throughout the south of France but his most recent experience was as Head Chef at Bistro Sol, Corsica for the last 5 years. We invited Jean Baptiste to come to Australia and join us at Bistro Volière as head chef. We are thrilled to have him with us.
JB is passionate about using the best fresh produce to prepare traditional, provençal and modern French cuisine.
